Lemon Garlic Marinated Shrimp

A cold marinated shrimp appetizer made withshrimp that's cooked first, then chilled in a bright lemon garlic marinade.Perfect for making the night before a party.

Ingredients
  

  • 2 lbs large shrimp (16/20 count), peeled and deveined
  • cup olive oil
  • Juice and zest of 2 large lemons
  • 4 cloves garlic, minced
  • 2 tbsp chopped fresh parsley or dill
  • 1 tsp Dijon mustard
  • ½ tsp red pepper flakes (optional)
  • Salt and black pepper, to taste

Instructions
 

  • Bring a large pot of salted water to a boil and add the shrimp. Cook about 2 minutes, until pink and opaque, then drain.
  • Rinse the shrimp under cold water or plunge into an ice bath to stop the cooking.
  • Whisk together the olive oil, lemon juice, lemon zest, garlic, mustard, red pepper flakes, salt, and pepper in a large bowl. 
  • Add the cooled shrimp to the bowl and toss to coat evenly.
  • Cover and refrigerate at least 2 hours, or up to overnight, stirring once or twice.
  • Taste and adjust seasoning before serving cold.

Notes

Best eaten within 24 hours. Serve cold with toothpicks, over lettuce, or with crackers and the extra marinade as a dip.
