Lemon Garlic Marinated Shrimp

large shrimp (16/20 count), peeled and deveined
⅔
cup
olive oil
Juice and zest of 2 large lemons
4
cloves garlic, minced
2
tbsp
chopped fresh parsley or dill
1
tsp
Dijon mustard
½
tsp
red pepper flakes (optional)
Salt and black pepper, to taste
Instructions
Bring a large pot of salted water to a boil and add the shrimp. Cook about 2 minutes, until pink and opaque, then drain.
Rinse the shrimp under cold water or plunge into an ice bath to stop the cooking.
Whisk together the olive oil, lemon juice, lemon zest, garlic, mustard, red pepper flakes, salt, and pepper in a large bowl.
Add the cooled shrimp to the bowl and toss to coat evenly.
Cover and refrigerate at least 2 hours, or up to overnight, stirring once or twice.
Taste and adjust seasoning before serving cold.
Notes
Best eaten within 24 hours. Serve cold with toothpicks, over lettuce, or with crackers and the extra marinade as a dip.
