Spicy Jalapeño Cranberry Sauce

A tart, sweet, and spicy cranberry sauce madewith fresh cranberries, orange, and jalapeño. This is the cranberry sauce Iactually look forward to eating, not just the one I feel obligated to put onthe table.

Ingredients
  

  • 12 ounces fresh cranberries, rinsed
  • ¾ cup granulated sugar
  • ¾ cup orange juice
  • Zest of 1 orange
  • 1 to 2 fresh jalapeños, seeded and minced
  • 1 tsp fresh grated ginger
  • tbsp minced jarred pickled jalapeños,optional
  • Pinchof salt

Instructions
 

  • Combine the cranberries, sugar, orange juice, and orange zest in a medium saucepan over medium heat.
  • Bring to a gentle boil, then reduce heat and simmer about 10 minutes, stirring occasionally, until most cranberries have popped and the sauce thickens.
  • Stir in the fresh jalapeño and ginger, then simmer another 5 minutes. 
  • Remove from heat and stir in the pickled jalapeño if using, along with the salt.
  • Cool at room temperature about 20 minutes, then chill in the fridge before serving. 

Notes

Keeps in the fridge for about a week in a sealed container. Tastes better the day after it's made.
