Pickle Dip Recipe (Creamy Dill Pickle Cream Cheese Dip)

Ingredients
  

  • 16 oz Grillo's Classic Dill Spears, finely diced
  • 8 oz whipped cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup plain Greek yogurt
  • 1 oz packet ranch seasoning
  • 1 to 2 tbsp pickle juice
  • 1 cup sharp cheddar, freshly shredded
  • 3 to 4 slices crispy bacon, crumbled
  • 3 green onions, thinly sliced
  • 1 jalapeño, finely diced (optional)
  • 2 to 3 dashes hot sauce (optional)

Instructions
 

  • Finely dice pickles and blot dry on paper towels. Let sit 1 to 2 minutes and blot again.
  • Beat whipped cream cheese, sour cream, and Greek yogurt with a hand mixer 2 to 3 minutes until smooth.
  • Add ranch seasoning and 1 tbsp pickle juice. Stir to combine. Taste and add second tbsp if desired.
  • Fold in pickles, cheddar, bacon, and green onions. Add jalapeño and hot sauce if using.
  • Cover and refrigerate at least 30 minutes. Overnight is best.
  • Serve with wavy chips, Fritos Scoops, pretzels, or crackers.

Notes

Do not skip draining the pickles. Undrained pickles are the number one reason this dip turns watery. Shred your own cheddar rather than using pre-shredded for a smoother texture. Dip keeps 3 to 4 days refrigerated.
