Garlic Butter Salmon Bowl

- 2 salmon fillets (about 6 oz each), skin-on or skinless
- Salt and black pepper, to taste
- 1 tbsp neutral oil
- 2 tbsp butter
- 3 cloves garlic, minced
- 1 tsp lemon juice
- 1 tsp soy sauce (optional)
- 2 cups broccoli florets or snap peas
- 2 microwave rice pouches (or 2 cups cooked rice)
- Furikake seasoning or sesame seeds, for topping
- Red pepper flakes, optional
Start the microwave rice pouches according to package directions.
Pat the salmon completely dry and season both sides with salt and pepper.
Heat oil in a skillet over medium-high heat for 2 minutes before adding the salmon.
Sear the salmon undisturbed for 3 to 4 minutes, then flip.
Add the butter and garlic to the pan, tilt slightly, and spoon the melted butter over the salmon for about 1 minute.
Remove the salmon while the center still looks slightly underdone, and stir the lemon juice and soy sauce into the remaining pan sauce.
Add the broccoli or snap peas to the same pan and cook for 2 to 3 minutes, tossing often.
Divide the rice between two bowls, top with the vegetables and salmon, then spoon the pan sauce over the top.
Finish with furikake seasoning or sesame seeds and red pepper flakes if using.
