Ingredients
  

  • 2 salmon fillets (about 6 oz each), skin-on or skinless
  • Salt and black pepper, to taste
  • 1 tbsp neutral oil
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 tsp lemon juice
  • 1 tsp soy sauce (optional)
  • 2 cups broccoli florets or snap peas
  • 2 microwave rice pouches (or 2 cups cooked rice)
  • Furikake seasoning or sesame seeds, for topping
  • Red pepper flakes, optional

Instructions
 

  • Start the microwave rice pouches according to package directions.
  • Pat the salmon completely dry and season both sides with salt and pepper.
  • Heat oil in a skillet over medium-high heat for 2 minutes before adding the salmon.
  • Sear the salmon undisturbed for 3 to 4 minutes, then flip.
  • Add the butter and garlic to the pan, tilt slightly, and spoon the melted butter over the salmon for about 1 minute.
  • Remove the salmon while the center still looks slightly underdone, and stir the lemon juice and soy sauce into the remaining pan sauce.
  • Add the broccoli or snap peas to the same pan and cook for 2 to 3 minutes, tossing often.
  • Divide the rice between two bowls, top with the vegetables and salmon, then spoon the pan sauce over the top.
  • Finish with furikake seasoning or sesame seeds and red pepper flakes if using.
