Cranberry Brie Bites

Mini puff pastry cups filled with cubed brie anda spoonful of cranberry sauce, baked until golden and gooey. A 3-minute-prepappetizer that works for holidays or any party where you want something warm onthe table fast.

Ingredients
  

  • 1 1 sheet frozen puff pastry, thawed in the fridge
  • 8 oz brie, cut into 1-inch cubes, rind on
  • cup cranberry sauce or cranberry jam
  • A few sprigs fresh thyme or rosemary
  • Honey, for drizzling (optional)

Instructions
 

  • Preheat oven to 375°F and lightly grease a 24-cup mini muffin tin.
  • Roll the puff pastry sheet lightly to smooth the folds, then cut into 24 small squares.
  • Press one square into each muffin cup, letting the corners point upward.
  • Place one cube of brie into each pastry cup. 
  • Top each with a rounded teaspoon of cranberry sauce.
  • Bake 15 to 18 minutes, until the pastry is deep golden and puffed and the cheese is soft.
  • Let cool in the pan 5 minutes before removing.
  • Top with fresh thyme leaves and a drizzle of honey, then serve warm.

Notes

Assemble up to a day ahead and refrigerate unbaked, then bake straight from cold with a few extra minutes added. Keep the pastry cold right up until baking for the best puff.
