- 2 tbsp olive oil
- 1 medium yellow onion, diced
- 3 celery stalks, sliced
- 3 carrots, sliced
- 3 cloves garlic, minced
- 1 tbsp tomato paste
- 1 can (14.5 oz) fire-roasted diced tomatoes
- 6 cups vegetable or chicken broth
- 1 bell pepper, diced
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 small head green cabbage, chopped (about 6 cups)
- Salt and black pepper, to taste
Heat the olive oil in a large pot over medium heat. Add the onion, celery, and carrots and saute for 8 minutes, until the onion is translucent.
Stir in the garlic and tomato paste and cook for 1 minute, until fragrant.
Add the diced tomatoes, broth, bell pepper, oregano, and thyme. Bring to a simmer.
Add the chopped cabbage and simmer uncovered for 25 to 30 minutes, until the cabbage is tender.
Season with salt and pepper to taste before serving.
