Bacon-Wrapped Blue Cheese Dates (Devils on Horseback)

Sweet Medjool dates stuffed with blue cheese, wrapped inbacon, and baked on a wire rack until the bacon turns deeply crisp. Amake-ahead party appetizer that comes together with just three ingredients.

Ingredients
  

  • 12 Medjool dates, pitted
  • 3 ounces blue cheese, crumbled
  • 6 slices regular-cut bacon, halved
  • 12 toothpicks

Instructions
 

  • Preheat the oven to 400°F. Set a wire rack inside a foil-lined baking sheet.
  • Slice each date lengthwise without cutting all the way through, then remove the pit.
  • Press about half a teaspoon of crumbled blue cheese into each date and close it around the filling.
  • Wrap a half slice of bacon around each stuffed date and secure with a toothpick.
  • Place the wrapped dates seam side down on the wire rack, spaced apart.
  • Bake for 20 to 25 minutes, until the bacon is deeply browned and crisp.
  • Let cool for 5 minutes before serving warm.

Notes

For a make-ahead version, assemble and refrigerate up to 2 days ahead, or freeze up to 1 month, adding extra bake time from cold or frozen.
